Ingredients
  

  • 1 kg Firm potatoes Yukon Gold or red potatoes work best.
  • 4 tablespoons Olive oil For a crispy exterior and rich flavor.
  • 1 teaspoon Paprika Adds mild sweetness and color.
  • 1 teaspoon Garlic powder Provides savory depth.
  • 1 teaspoon Onion powder Adds subtle sweetness.
  • 1 teaspoon Dried rosemary Brings a fragrant, earthy flavor.
  • 1 teaspoon Dried thyme Adds freshness and complexity.
  • to taste Salt Enhances overall flavor.
  • to taste Black pepper Enhances overall flavor.

Instructions
 

  • Preheat your oven to 220 °C (425 °F).
  • Peel the potatoes and cut them into even-sized cubes (about 2.5 cm). Rinse under cold water to remove excess starch and pat dry.
  • In a large mixing bowl, combine olive oil, paprika, garlic powder, onion powder, dried rosemary, dried thyme, salt, and pepper.
  • Add the potato cubes to the bowl and toss until they are evenly coated with the oil and seasoning mixture.
  • Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
  • Roast the potatoes in the preheated oven for 30 to 35 minutes, tossing halfway through, until golden brown and crispy.
  • Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
