- Preheat your oven to 220 °C (425 °F).
- Peel the potatoes and cut them into even-sized cubes (about 2.5 cm). Rinse under cold water to remove excess starch and pat dry.
- In a large mixing bowl, combine olive oil, paprika, garlic powder, onion powder, dried rosemary, dried thyme, salt, and pepper.
- Add the potato cubes to the bowl and toss until they are evenly coated with the oil and seasoning mixture.
- Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
- Roast the potatoes in the preheated oven for 30 to 35 minutes, tossing halfway through, until golden brown and crispy.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
