- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x9-inch baking dish with cooking spray or butter.
- In a large mixing bowl, whisk the cottage cheese and eggs together until smooth and well combined.
- Stir in the shredded mozzarella, most of the turkey pepperoni (reserve about a third for topping), parmesan, Italian seasoning, garlic powder, salt, and pepper.
- Pour the mixture into the prepared baking dish and spread evenly with a spatula. Scatter the reserved pepperoni slices over the top.
- Bake for 30 to 35 minutes until the center is fully set and the cheese on top is bubbly and golden.
- Let the bake rest for 5 minutes before slicing. Serve warm with marinara sauce on the side for dipping.
Notes
Try adding chopped spinach or diced bell peppers for extra nutrients. Use ricotta instead of cottage cheese for a creamier finish. Add sliced olives and mushrooms for a vegetarian version. Freezes well -- wrap individual slices in foil and reheat from frozen at 350 degrees F for 20 to 25 minutes.
