- Preheat the oven to 375°F (190°C) and grease a 9x9-inch baking dish thoroughly to prevent sticking.
- In a large bowl, whisk the cottage cheese and eggs together for about 1 minute until smooth and well combined.
- Stir in the mozzarella cheese, most of the mini turkey pepperoni (save some for the top), parmesan, Italian seasoning, garlic powder, salt, and pepper until evenly distributed.
- Pour the mixture into the prepared baking dish and spread evenly with a spatula. Top with the reserved pepperoni slices.
- Bake for 30-35 minutes, or until the bake is set in the center and the cheese is bubbly and golden on top.
- Let the bake cool for 5-10 minutes before slicing to allow it to set properly. Serve with marinara sauce for dipping.
Notes
For vegetarian option, substitute turkey pepperoni with vegetables like bell peppers, mushrooms, or olives. Can be made ahead and refrigerated before baking. Freezes well for up to 3 months when cut into portions.
