Protein Greek Yogurt Cookies

Ingredients
  

  • 1 cup plain Greek yogurt full fat or low fat
  • 1/2 cup natural sweetener honey, maple syrup, or coconut sugar
  • 1 large egg room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup oat flour
  • 1/2 cup protein powder vanilla or neutral whey preferred
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mix ins dark chocolate chips, nuts, or dried fruit

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together the Greek yogurt, sweetener, egg, and vanilla extract until smooth.
  3. In a separate medium bowl, mix the oat flour, protein powder, baking soda, and salt.
  4. Fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Stir in your choice of mix ins.
  6. Scoop tablespoon sized portions onto the baking sheet, leaving about 2 inches between them. Flatten each mound slightly.
  7. Bake for 10 to 12 minutes, or until the edges turn golden.
  8. Let cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

If batter is too runny, chill dough for 15 mins or add more flour. Store with a slice of bread to keep soft.
