- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
- In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix the wet ingredients: pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well blended.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix.
- In a medium bowl, prepare the cream cheese filling by mixing softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Spoon a tablespoon of muffin batter into each muffin cup, add a dollop of cream cheese filling, and top with another tablespoon of muffin batter.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
