Method
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until evenly coated.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Refrigerate to set.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
- Gradually add powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Divide the cheesecake filling evenly into six separate bowls. Add food coloring to each bowl to create the desired colors.
- Remove the crust from the refrigerator. Spoon dollops of each colored cheesecake filling onto the crust, alternating colors.
- Use a knife or skewer to swirl the colors together gently for a marbled effect.
- Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or until set.
