Ingredients
  

  • 0.5 cup ranch dressing store-bought or homemade
  • 0.25 cup grated parmesan cheese
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried parsley or fresh parsley, chopped
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 1 tsp lemon juice optional for extra tang
  • 1.5 lbs boneless, skinless chicken breasts or thighs cut into 1-inch cubes

Method
 

  1. In a mixing bowl, whisk together ranch dressing, parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and lemon juice until well combined.
  2. Place cubed chicken into a resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring all pieces are well-coated. Seal and refrigerate for at least 30 minutes or up to 2 hours.
  3. If using wooden skewers, soak them in water for 15 minutes to prevent burning.
  4. Thread marinated chicken cubes onto skewers, leaving a little space between each piece for even cooking.
  5. Preheat grill to medium-high heat (around 400°F).
  6. Place skewers on grill and cook for 10-15 minutes, turning every 3-4 minutes, until chicken reaches an internal temperature of 165°F and has a nice char on the outside.
  7. Remove skewers from grill and let rest for 3-5 minutes before serving.
  8. Garnish with additional chopped parsley or extra parmesan cheese if desired. Serve with your favorite side dishes or dipping sauce.

Notes

For juicier skewers, use chicken thighs instead of breasts. Marinate overnight for deeper flavor if time allows. Skewers can be baked at 400°F for 18-22 minutes if grill is unavailable.
