Ingredients
  

Seafood

  • 4 fillets Red snapper Fresh and flaky, the star of this dish.
  • 1 lb Shrimp Peeled and deveined, adds sweetness.

Grits

  • 1 cup Grits Choose stone-ground for best texture.
  • 2 cups Water Essential for cooking the grits.
  • 1 cup Heavy cream Adds richness to both the grits and sauce.
  • 1/2 cup Shredded cheddar cheese For a cheesy flavor in the grits.
  • 2 tablespoons Cajun seasoning Brings heat and flavor.
  • 4 tablespoons Butter Adds richness and helps cook the shrimp.
  • 1 tablespoon Olive oil Used for searing the snapper.
  • 2 cloves Garlic Minced, enhances flavor.
  • 1/2 cup Chicken broth Adds depth to the sauce.

Seasonings

Instructions
 

  • In a medium saucepan, bring 2 cups of water to a boil. Stir in 1 cup of grits and cook according to package instructions, about 5-7 minutes.
  • As the grits thicken, add 1/2 cup of heavy cream and 1/2 cup of shredded cheddar cheese. Stir until the cheese melts and the mixture is creamy. Season with salt and pepper to taste.
  • In a large skillet, melt 4 tablespoons of butter over medium heat. Add the shrimp and cook for 2-3 minutes until pink. Remove shrimp and set aside.
  • In the same skillet, add 2 cloves of minced garlic and sauté for 1 minute. Pour in 1 cup of heavy cream and 1/2 cup of chicken broth. Cook for 3-5 minutes until the sauce thickens. Season with Cajun seasoning, salt, and pepper.
  • Season the red snapper fillets with 2 tablespoons of Cajun seasoning. In the same skillet, add 1 tablespoon of olive oil and sear the snapper for 4-5 minutes on each side until cooked through.
  • To serve, spoon creamy grits onto plates, top with seared red snapper and shrimp, and drizzle with Cajun cream sauce.
