Ingredients
  

For the Crust:
  • 2 cups Oreo crumbs or graham cracker crumbs
  • 1/4 cup melted butter
For the Cheesecake:
  • 24 oz 680g cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup caramel sauce
  • 10-12 Reese's Peanut Butter Cups chopped
For the Topping:
  • 1/2 cup caramel sauce
  • 1/4 cup chopped Reese's Peanut Butter Cups
  • Whipped cream optional

Method
 

Step 1: Prepare the Crust
  1. Preheat Oven: Set your oven to 350°F (175°C).
  2. Mix Crust: Combine Oreo crumbs with melted butter in a bowl until mixed well.
  3. Press Mixture: Firmly press the crumb mixture into the bottom of a springform pan. Bake for 10 minutes, then let it cool.
Step 2: Make the Cheesecake Filling
  1. Beat Cream Cheese: In a large bowl, beat the softened cream cheese with sugar until smooth.
  2. Add Eggs: Add the eggs one at a time, mixing well after each addition.
  3. Mix in Other Ingredients: Stir in vanilla extract and sour cream until everything is blended. Gently fold in caramel sauce and chopped Reese's peanut butter cups.
Step 3: Assemble the Cheesecake
  1. Pour Filling: Carefully pour the cheesecake filling over the cooled crust.
  2. Smooth Top: Use a spatula to smooth the top. If you like, drizzle a little caramel sauce on top and swirl it for a nice design.
Step 4: Bake the Cheesecake
  1. Prepare for Baking: Wrap the outside of the springform pan with aluminum foil to prevent leaks.
  2. Create a Water Bath: Place the pan in a larger baking dish and fill it with hot water halfway up the sides.
  3. Bake: Bake for 60-70 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
Step 5: Chill and Serve
  1. Refrigerate: Take the cheesecake out of the oven and refrigerate for at least 4 hours, or overnight.
  2. Top and Enjoy: Before serving, add extra caramel sauce, chopped Reese's Peanut Butter Cups, and whipped cream if desired.
