Method
 

  1. Preheat your oven to 425°F (220°C).

  3. Spread the carrots in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until tender and caramelized, turning halfway through for even cooking.
  4. In a mixing bowl, add the ricotta cheese, honey, and red pepper flakes.
  5. Using a hand mixer or a whisk, whip the mixture until smooth and creamy. Adjust seasoning with salt if needed.
  6. Once the carrots are roasted, arrange them on a serving platter.
  7. Spoon the whipped ricotta over the warm roasted carrots.
  8. Finish by drizzling additional honey over the top and garnishing with fresh herbs.
