Ingredients
  

  • 1 pound Carrots Peeled and cut into sticks.
  • 2 tablespoons Olive oil For roasting the carrots.

  • 1 cup Ricotta cheese For whipping.
  • 1 tablespoon Honey For sweetness in the ricotta.
  • 1/4 teaspoon Red pepper flakes Adjust to taste for heat.
  • as needed Fresh herbs Such as parsley or thyme for garnish.

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the carrot sticks with olive oil, salt, and pepper until evenly coated.
  • Spread the carrots in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until tender and caramelized, turning halfway through for even cooking.
  • In a mixing bowl, add the ricotta cheese, honey, and red pepper flakes.
  • Using a hand mixer or a whisk, whip the mixture until smooth and creamy. Adjust seasoning with salt if needed.
  • Once the carrots are roasted, arrange them on a serving platter.
  • Spoon the whipped ricotta over the warm roasted carrots.
  • Finish by drizzling additional honey over the top and garnishing with fresh herbs.
