Instructions
 

  • Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  • Peel the Yukon Gold potatoes and dice them into 1-inch cubes. Place them in a large mixing bowl.
  • In a small bowl, combine olive oil, paprika, garlic powder, onion powder, cumin, chili powder, black pepper, and salt. Stir until well blended.
  • Pour the seasoning mixture over the diced potatoes and toss gently to coat evenly.
  • Spread the seasoned potatoes in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  • Roast the potatoes in the preheated oven for 35 to 45 minutes, stirring every 10 minutes until golden brown and crispy.
  • Remove from the oven and let cool slightly before serving.
