  • 4 medium Zucchini Sliced into rounds, about 1/4 inch thick.
  • 2 tablespoons Olive oil For coating the zucchini.
  • 1 teaspoon Garlic powder Adds flavor.
  • 1 teaspoon Onion powder Enhances the taste.
  • to taste Salt For seasoning.
  • to taste Pepper For seasoning.
  • 1 teaspoon Dried Italian herbs Optional, for added flavor.
  • to garnish Fresh parsley Chopped, for garnish.

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash the zucchini and slice them into rounds, about 1/4 inch thick.
  3. In a large bowl, combine the sliced zucchini with olive oil, garlic powder, onion powder, salt, pepper, and dried Italian herbs if using. Toss until the zucchini is evenly coated.
  4. Spread the seasoned zucchini in a single layer on a baking sheet lined with parchment paper.
  5. Place the baking sheet in the preheated oven and roast for 15-20 minutes, or until the zucchini is tender and lightly browned, stirring halfway through for even cooking.
  6. Remove from the oven and transfer to a serving dish. Garnish with chopped fresh parsley before serving.
