Royal Icing Ingredients

  • 4 cups Powdered sugar Main ingredient for sweetness and structure.
  • 3 tablespoons Meringue powder Stabilizes the icing; can substitute with pasteurized egg whites.
  • 1/2 cup Water To mix with powdered sugar and meringue powder.
  • 1 teaspoon Vanilla extract Optional, for added flavor.

Fondant Ingredients

  • 1 pound Ready-to-use fondant Base for all decorations.
  • as needed tablespoons Cornstarch or powdered sugar For dusting work surface.

Instructions
 

  • Sift powdered sugar into a large mixing bowl.
  • Add meringue powder and water, mix on low speed until combined.
  • Increase speed to medium and beat for 5-7 minutes until glossy and stiff peaks form.
  • If desired, add vanilla extract for flavor.
  • Divide icing into bowls and add food coloring to achieve desired shades.
  • Prepare piping bags with small round tips and fill with colored royal icing.
  • Pipe flower shapes on parchment paper and allow to dry for at least 24 hours.
  • Knead fondant on a dusted surface until soft and pliable.
  • Color fondant with food coloring if desired, then roll out to 1/4 inch thick.
  • Cut out shapes using cookie cutters or molds and allow to dry for 4-6 hours.
  • Attach dried royal icing flowers to the cake using a small amount of royal icing.
  • Add fondant decorations to the cake as desired, using water or royal icing to help them stick.
