Ingredients
  

  • 2 tablespoons Olive oil For sautéing the vegetables.

Instructions
 

  • Prepare all vegetables by washing, peeling, and chopping them into small, even pieces.
  • In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Add diced carrots, celery, zucchini, yellow bell pepper, and green beans. Cook for 5-7 minutes, stirring occasionally.
  • Stir in diced tomatoes with their juices, then pour in vegetable broth and bring to a boil.
  • Reduce heat to a simmer, add cannellini beans and small pasta, oregano, basil, salt, and pepper. Simmer for 10-12 minutes until pasta is cooked.
  • Taste and adjust seasoning if needed. Ladle soup into bowls and garnish with fresh parsley and grated Parmesan cheese if desired.
