Method
- Prepare the seafood by cutting salmon into bite-sized chunks and seasoning with salt, black pepper, and paprika.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Sear the salmon for 2-3 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add shrimp and cook for about 2 minutes on each side until pink and opaque. Remove and set aside with the salmon.
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
- In the same skillet, melt 3 tablespoons of butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in 1 cup of heavy cream and 1/2 cup of broth. Stir and bring to a gentle simmer. Gradually whisk in 1 cup of grated Parmesan cheese until smooth.
- Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add reserved pasta water until desired consistency is reached.
- Gently fold in the cooked salmon and shrimp, warming through for 1-2 minutes.
- Serve the pasta garnished with chopped parsley and additional Parmesan cheese if desired.
