Ingredients
  

  • 1 lb sausage Italian or chicken sausage
  • 2 large sweet potatoes peeled and cubed
  • 1/4 cup honey
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Peel and cube the sweet potatoes into uniform 1-inch pieces to ensure even cooking.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook until browned, approximately 5 to 7 minutes.
  3. Once the sausage is browned, add the cubed sweet potatoes to the skillet. Stir well to combine and cook for 5 minutes until they start to soften.
  4. In a small bowl, whisk together honey, minced garlic, soy sauce, paprika, salt, and pepper until well combined.
  5. Pour the honey garlic sauce over the sausage and sweet potatoes, stirring to coat everything evenly.
  6. Cover the skillet and let it simmer for about 10 minutes, allowing the sweet potatoes to become tender and the flavors to meld together.
  7. Once cooked and sweet potatoes are easily pierced with a fork, garnish with freshly chopped parsley. Serve hot.

Notes

Turkey or plant-based sausage can be used for a lighter option. Butternut squash or regular potatoes work as sweet potato alternatives. Maple syrup can substitute for honey in a vegan version. Ensure sweet potatoes are fork-tender before serving.
