Ingredients
  

  • 1 lb Italian sausage Adds rich, savory flavor.
  • 1 medium Onion, chopped Provides a sweet and aromatic base.
  • 3 cloves Garlic, minced Adds depth and aroma.
  • 6 cups Chicken broth Forms the soup's base.
  • 1 can Diced tomatoes, undrained Adds acidity and sweetness.
  • 1 teaspoon Dried basil Classic Italian flavor.
  • 1 teaspoon Dried oregano Enhances the overall taste.
  • 1 pkg Tortellini Makes the soup filling.
  • 2 cups Fresh spinach, chopped Adds color and nutrients.
  • 1/2 cup Parmesan cheese, grated Adds a salty, nutty flavor.
  • 1 tablespoon Olive oil Used for cooking the sausage and aromatics.

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes, breaking it into smaller pieces.
  • Add chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion is translucent.
  • Pour in the chicken broth, add the undrained diced tomatoes, dried basil, oregano, salt, and pepper. Stir to combine and bring to a boil.
  • Once boiling, add the tortellini and reduce heat to a simmer. Cook for 5-7 minutes until the tortellini is tender.
  • Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Remove from heat and stir in grated Parmesan cheese.
  • Ladle the soup into bowls and serve hot, garnished with extra Parmesan if desired.
