- Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes, breaking it into smaller pieces.
- Add chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion is translucent.
- Pour in the chicken broth, add the undrained diced tomatoes, dried basil, oregano, salt, and pepper. Stir to combine and bring to a boil.
- Once boiling, add the tortellini and reduce heat to a simmer. Cook for 5-7 minutes until the tortellini is tender.
- Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Remove from heat and stir in grated Parmesan cheese.
- Ladle the soup into bowls and serve hot, garnished with extra Parmesan if desired.
