  • 4 medium Zucchinis Choose firm zucchinis with a vibrant green color.

  • 1 teaspoon Dried oregano Adds earthy flavor.

Method
 

  1. Wash the zucchinis under cold water and slice them into rounds, about 1/4 inch thick.
  2. Heat olive oil in a large skillet over medium heat until it shimmers.
  3. Add the sliced zucchini to the skillet, spreading them out evenly. Sauté for about 5-7 minutes, stirring occasionally, until tender and slightly golden.
  4. Add minced garlic, salt, pepper, dried oregano, and red pepper flakes (if using). Stir and sauté for an additional minute until fragrant.
  5. Remove from heat and garnish with fresh parsley before serving.
