  • 1/2 cup Mozzarella cheese or sharp cheddar
  • 4 tablespoons unsalted butter melted
  • 1 tablespoon mayonnaise or yogurt
  • 1 tablespoon dried parsley fresh parsley is a substitute
  • 1 teaspoon garlic powder divided
  • 1 teaspoon onion powder or shallots
  • 1 teaspoon smoked paprika or traditional paprika
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Preheat the oven to 400 degrees F (200 degrees C) and prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  2. Pat dry the chicken breasts using paper towels. Brush both sides with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Sear the chicken in a hot skillet with a drizzle of olive oil over medium high heat. Cook for 2 to 3 minutes on each side until golden brown, then transfer to the prepared baking sheet.
  4. Mix the crust ingredients in a bowl. Combine panko breadcrumbs, freshly grated Parmesan, mozzarella, melted butter, mayonnaise, dried parsley, and a portion of garlic powder. Stir until the mixture resembles moist crumbs.
  5. Top each chicken breast generously with the crumb mixture, pressing down lightly to ensure it adheres well.
  6. Bake for 20 to 25 minutes until the chicken is cooked through and reaches an internal temperature of 165 degrees F (74 degrees C).
  7. Rest the chicken for 5 minutes after baking. Garnish with fresh parsley and serve with lemon wedges.
