- Preheat your oven to 375°F (190°C).
- Using kitchen shears, carefully cut down the top shell of each lobster tail and gently pull the lobster meat up slightly.
- Brush the lobster meat with melted butter and season with paprika, garlic powder, salt, and black pepper.
- In a pan, melt 3 tablespoons of unsalted butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add chicken broth to the pan and let it reduce for about a minute. Then stir in heavy cream, Dijon mustard, salt, black pepper, and lemon juice. Simmer for 2-3 minutes until thickened.
- Heat 1 tablespoon of olive oil in a pan over medium-high heat. Place the lobster tails flesh-side down and sear for 2-3 minutes until golden brown.
- Transfer the lobster tails to a baking dish and bake in the preheated oven for an additional 5-7 minutes until the meat is opaque and tender.
- Plate the lobster tails and drizzle generously with the garlic butter sauce. Garnish with chopped chives and serve with lemon wedges.
