Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 1/2 cups cherry tomatoes halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 4 slices fresh mozzarella
  • 1/4 cup fresh basil leaves
  • 1/4 cup balsamic glaze

Method
 

  1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
  2. Place chicken breasts on sheet pan. Drizzle with olive oil and season with salt, pepper, garlic powder, and Italian seasoning.
  3. Scatter halved cherry tomatoes around chicken and toss lightly in oil.
  4. Roast for 20 minutes until chicken reaches 160°F (70°C) internally.
  5. Top each chicken breast with a slice of mozzarella. Return to oven for 5 minutes until cheese is melted and chicken reaches 165°F (75°C).
  6. Drizzle with balsamic glaze and sprinkle with fresh basil before serving.

Notes

Use thighs instead of breasts if desired (adjust cooking time). Don’t add mozzarella too early to avoid overcooking. Line pan with parchment for easy cleanup. Store leftovers in fridge for 3 days; reheat gently in oven.
