- Rinse the shrimp under cold water, pat dry, and season with salt and pepper. Set aside.
- In a large pot, bring salted water to a rolling boil. Add fettuccine and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir frequently for 2-3 minutes until slightly thickened.
- Gradually whisk in the Parmesan cheese until melted and smooth. Adjust the consistency with reserved pasta water if needed. Season with salt and pepper to taste.
- Add the cooked fettuccine and shrimp to the skillet, tossing gently to combine and coat the pasta in the sauce.
- Remove from heat and garnish with chopped parsley. Serve hot, optionally with extra Parmesan cheese and a lemon wedge.
