Ingredients

  • 1 pound Large shrimp Peeled and deveined for convenience.

Method
 

  1. Rinse the shrimp under cold water, pat dry, and season with salt and pepper. Set aside.
  2. In a large pot, bring salted water to a rolling boil. Add fettuccine and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water, then drain the pasta.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir frequently for 2-3 minutes until slightly thickened.
  5. Gradually whisk in the Parmesan cheese until melted and smooth. Adjust the consistency with reserved pasta water if needed. Season with salt and pepper to taste.
  6. Add the cooked fettuccine and shrimp to the skillet, tossing gently to combine and coat the pasta in the sauce.
  7. Remove from heat and garnish with chopped parsley. Serve hot, optionally with extra Parmesan cheese and a lemon wedge.
