Method
- Place the boneless, skinless chicken breasts in the slow cooker.
- Slice the bell pepper and onion, then add them on top of the chicken.
- Sprinkle chili powder, cumin, paprika, oregano, salt, and pepper over the chicken and vegetables. Add minced garlic.
- Pour chicken broth over the seasoned ingredients and squeeze lime juice on top.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker and stir with the vegetables and juices.
- Serve the fajitas with warm tortillas and your choice of toppings.
