Ingredients
  

  • 3 pounds sirloin steak cut into bite-sized pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil plus more as needed
  • 1 small sweet onion thinly sliced
  • 3 cloves garlic thinly sliced
  • 1 cup unsalted beef stock
  • 1 ounce packet au jus gravy mix
  • 4 tablespoons unsalted butter thinly sliced

Method
 

  1. Season sirloin pieces with kosher salt and black pepper in a large bowl, tossing to coat evenly.
  2. Heat large skillet over medium-high heat and add vegetable oil.
  3. Sear seasoned steak pieces in batches until golden-brown on all sides, adding more oil as needed.
  4. Transfer seared beef to 6-quart slow cooker and add sliced onion and garlic.
  5. Pour beef stock over ingredients and sprinkle au jus mix evenly over top.
  6. Distribute butter slices across surface.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring once hourly if possible.
  8. Serve over mashed potatoes, egg noodles, or rice.

Notes

Don't skip the searing step for maximum flavor development. Chuck roast or flank steak work as substitutes for sirloin. Add Worcestershire sauce or bay leaves for additional depth.
