Ingredients
  

  • 4 boneless, skinless chicken breasts about 1.5 pounds
  • 0.5 cup unsalted butter 1 stick
  • 6 cloves garlic minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 1 lemon juiced
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Melt butter in a small bowl using the microwave or stovetop.
  2. Stir in minced garlic, onion powder, smoked paprika, Italian seasoning, salt, and pepper.
  3. Place chicken breasts in the slow cooker and pour the garlic butter mixture evenly over them.
  4. Squeeze lemon juice over the chicken.
  5. Cover and cook on low for 6 hours, until chicken is tender and fully cooked (165°F internal temperature).
  6. Remove chicken and place on serving plate—either shred or serve whole.
  7. Spoon remaining garlic butter sauce over the chicken.
  8. Garnish with fresh parsley and serve.

Notes

Can use boneless thighs instead of breasts. Optional: broil chicken for crispy top. Safe internal temp: 165°F. Great with mashed potatoes, pasta, or crusty bread.
