Method
 

  1. Gather all your ingredients to ensure a smooth cooking process.
  2. Rinse the chicken thighs under cold water and pat them dry with paper towels. Place them in the slow cooker.
  3. In a medium bowl, whisk together honey, soy sauce, ketchup, minced garlic, rice vinegar, ground ginger, black pepper, and red pepper flakes until well combined.
  4. Pour the honey garlic sauce over the chicken thighs in the slow cooker, ensuring each piece is well coated.
  5. Cover the slow cooker and set it to cook on low for 6-7 hours or on high for 3-4 hours.
  6. Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker and mix it with the sauce.
  7. Serve the honey garlic chicken over rice or noodles, garnished with chopped green onions and sesame seeds.
