Smash Burger Tacos

Smash Burger Tacos are a delightful fusion of two classic foods made with flour tortillas topped with ground beef patties, cheese, onions, pickles, shredded lettuce and homemade copycat Big Mac sauce.

Ingredients
  

  • 1 cup mayonnaise
  • 4 tablespoons pickle relish
  • 2 tablespoons ketchup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon sugar
  • 0.5 tablespoon white vinegar
  • 1.25 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 4 flour tortillas 6 inches in size
  • 1 pound lean ground beef
  • Salt and pepper to taste
  • 1 tablespoon neutral oil vegetable, canola, or avocado
  • 4 slices American cheese or preferred burger cheese
  • 1 small onion diced
  • Dill pickle chips
  • Shredded iceberg lettuce

Equipment

  • Skillet or griddle
  • Spatula
  • Small bowl for sauce
  • Measuring spoons

Method
 

  1. In a small bowl, mix mayonnaise, relish, ketchup, mustard, sugar, vinegar, paprika, onion powder, and garlic powder. Mix well and set aside.
  2. Divide ground beef into 4 equal portions.
  3. Place tortillas on work surface and evenly spread one portion of ground beef over entire surface of each tortilla.
  4. Sprinkle salt and pepper over ground beef to taste.
  5. Heat skillet or griddle to medium-high heat and lightly coat with oil.
  6. Place tortilla meat-side down onto heated surface, applying slight pressure with spatula for a brief moment to form thin patty. Cook for 2-3 minutes until golden-brown crust forms.
  7. Flip patty so tortilla side is down. Place slice of cheese on top of patty. Continue cooking for 1-3 minutes depending on desired tortilla crispness.
  8. Remove smash burger taco from heat. Repeat cooking process for each taco.
  9. Top with burger sauce, lettuce, onions, and pickles. Serve immediately and enjoy.

Notes

Sauce can be made a day ahead and tastes better when ingredients meld together (30-60 minutes minimum). Recipe uses 6-inch fajita size tortillas. Can use 8 street taco size tortillas with adjusted meat portions. Recipe works best with griddle to make all tacos at once. Any leftover sauce stores in refrigerator for 5 days.
