Ingredients

  • 1 lb ground beef 80/20 blend preferred
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 4 large flour tortillas
  • 1 cup shredded cheddar or American cheese
  • pickles optional, for serving
  • diced onions optional, for serving
  • burger sauce optional, for serving

Equipment

  • Large skillet or griddle
  • Spatula

Method

  1. Heat a skillet or griddle over medium-high heat for 2-3 minutes.
  2. Press 2-3 ounces of ground beef directly onto one half of each tortilla. Season with 1/4 teaspoon each of salt, pepper, and garlic powder.
  3. Cook beef side down for 2-3 minutes until browned and crispy, without moving.
  4. Flip the tortilla, sprinkle cheese over the cooked beef, and fold tortilla in half.
  5. Grill both sides of the folded quesadilla for about 2 minutes each until crispy and cheese is melted.
  6. Let rest for 1 minute, then slice and serve with your favorite burger toppings or dipping sauce.

Notes

Make sure to season the beef generously and press firmly onto the tortilla. Use medium-high heat for best results and don't overfill with beef. Ground beef should reach internal temperature of 160°F for safety.
