- Preheat oven to 400°F (200°C). Grease a baking sheet with 1 tablespoon of olive oil.
- Boil potatoes in salted water for 25–30 minutes until very tender. Drain thoroughly.
- Mix 4 tablespoons olive oil with garlic powder, chives, salt, and pepper in a medium bowl.
- Place drained potatoes on baking sheet. Use a masher to gently press each potato once to flatten.
- Drizzle each smashed potato with seasoning mixture. Sprinkle with extra salt. Bake for 20–25 minutes until crispy and golden.
Notes
Use similar-sized potatoes for even cooking. Do not over-mash. Reheat in oven to retain crispiness. Excellent with grilled meats or vegetarian mains.
