Ingredients
  

  • 8 Yukon Gold potatoes medium to large
  • 4 tablespoons Extra virgin olive oil plus 1 tablespoon for greasing
  • 1 teaspoon Garlic powder
  • 1 tablespoon Fresh chives minced
  • Sea salt and black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Grease a baking sheet with 1 tablespoon of olive oil.
  2. Boil potatoes in salted water for 25–30 minutes until very tender. Drain thoroughly.
  3. Mix 4 tablespoons olive oil with garlic powder, chives, salt, and pepper in a medium bowl.
  4. Place drained potatoes on baking sheet. Use a masher to gently press each potato once to flatten.
  5. Drizzle each smashed potato with seasoning mixture. Sprinkle with extra salt. Bake for 20–25 minutes until crispy and golden.

Notes

Use similar-sized potatoes for even cooking. Do not over-mash. Reheat in oven to retain crispiness. Excellent with grilled meats or vegetarian mains.
