- Slice the smoked sausage into rounds and set aside. Dice the potatoes into bite-sized pieces and chop the onion. Mince the garlic.
- In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook for about 5-7 minutes, stirring occasionally, until browned and heated through. Remove the sausage from the skillet and set aside.
