Smoky Bourbon BBQ Bacon Wrapped Meatloaf Cupcakes

Individual meatloaf cupcakes wrapped in crispy bacon, glazed with sweet and smoky bourbon BBQ sauce, and topped with creamy mashed potato frosting. Perfect comfort food portions for any gathering.

Ingredients
  

  • 2 lbs ground beef 80/20 blend recommended
  • 1 cup panko breadcrumbs
  • 1/2 cup onion finely diced
  • 1/2 cup bell pepper finely diced, any color
  • 2 cloves garlic minced
  • 1 large egg
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 slices bacon
  • 1 cup BBQ sauce your favorite brand
  • 2 tbsp bourbon
  • 1 tbsp brown sugar
  • 1 tsp apple cider vinegar
  • 3 lbs potatoes peeled and cubed
  • 1/2 cup milk warmed, or cream
  • 1/4 cup butter
  • salt and pepper to taste for potatoes

  • Large mixing bowl

  • Potato masher or ricer
  • Pastry bag or ziplock bag
  • Large pot for boiling potatoes

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, panko breadcrumbs, diced onion, bell pepper, garlic, egg, ketchup, Worcestershire sauce, smoked paprika, salt, and black pepper. Mix gently with your hands until just combined, being careful not to overmix.
  3. Press the meat mixture firmly into each cup of a 12-cup muffin tin, filling to the top and eliminating air pockets.
  4. Wrap one slice of bacon around the outside of each meatloaf cupcake, tucking the ends underneath to secure.
  5. Bake for 25-30 minutes, or until the meatloaf reaches an internal temperature of 160°F and the bacon begins to crisp.
  6. While the cupcakes bake, prepare the bourbon BBQ glaze. In a small saucepan, combine BBQ sauce, bourbon, brown sugar, and apple cider vinegar. Bring to a simmer over medium heat and cook for 5 minutes, stirring occasionally, until slightly thickened.
  7. Remove the cupcakes from the oven and brush the tops generously with the bourbon BBQ glaze. Return to the oven and bake for another 5-10 minutes, until the glaze is caramelized.
  8. While the cupcakes finish baking, prepare the mashed potato frosting. Boil the peeled and cubed potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain well.
  9. Mash the potatoes with warmed milk, butter, salt, and pepper until smooth and creamy. The consistency should be thick enough to hold its shape when piped.
  10. Let the meatloaf cupcakes rest for 5 minutes after removing from the oven.
  11. Transfer the mashed potato frosting to a pastry bag fitted with a large star tip, or use a ziplock bag with the corner snipped off. Pipe the frosting onto the top of each meatloaf cupcake in decorative swirls.
  12. Drizzle with any remaining bourbon BBQ glaze and serve warm.

Notes

For a spicier kick, add a pinch of cayenne pepper to the meatloaf mixture. Ground turkey or chicken can be substituted for beef (reduce cooking time slightly and check for 165°F internal temperature). If you don't have bourbon, substitute with apple juice or beef broth. Store leftovers in an airtight container in the refrigerator for up to 3 days.
