Ingredients
  

  • 1 cup Ripe bananas, mashed About 2 medium bananas; the riper, the sweeter.
  • 1 cup Rolled oats Provides the base and hearty texture.
  • 1/2 cup Almond butter Can substitute with any nut butter.
  • 1/4 cup Honey or maple syrup Natural sweetener that keeps cookies moist.
  • 1/2 teaspoon Vanilla extract Adds aroma and depth of flavor.
  • 1/2 teaspoon Baking soda Helps cookies rise and become fluffy.
  • 1/2 teaspoon Cinnamon Brings warmth and spice.
  • 1/4 teaspoon Salt Balances sweetness and enhances flavor.
  • 1/2 cup Dark chocolate chips or raisins Optional for added flavor.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, mash the ripe bananas until smooth. Add almond butter, honey (or maple syrup), and vanilla extract. Mix until creamy.
  • In another bowl, whisk together rolled oats, baking soda, cinnamon, and salt.
  • Gradually add the dry mixture to the banana mixture, stirring gently until fully incorporated. Fold in chocolate chips or raisins if using.
  • Using a tablespoon or cookie scoop, drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly.
  • Bake for 10-12 minutes until edges are lightly golden and centers are soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
