- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the ripe bananas until smooth. Add almond butter, honey (or maple syrup), and vanilla extract. Mix until creamy.
- In another bowl, whisk together rolled oats, baking soda, cinnamon, and salt.
- Gradually add the dry mixture to the banana mixture, stirring gently until fully incorporated. Fold in chocolate chips or raisins if using.
- Using a tablespoon or cookie scoop, drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly.
- Bake for 10-12 minutes until edges are lightly golden and centers are soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
