  • 1/2 teaspoon Vanilla extract Adds aroma and depth of flavor.
  • 1/2 teaspoon Baking soda Helps cookies rise and become fluffy.
  • 1/2 teaspoon Cinnamon Brings warmth and spice.
  • 1/4 teaspoon Salt Balances sweetness and enhances flavor.
  • 1/2 cup Dark chocolate chips or raisins Optional for added flavor.

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas until smooth. Add almond butter, honey (or maple syrup), and vanilla extract. Mix until creamy.
  3. In another bowl, whisk together rolled oats, baking soda, cinnamon, and salt.
  4. Gradually add the dry mixture to the banana mixture, stirring gently until fully incorporated. Fold in chocolate chips or raisins if using.
  5. Using a tablespoon or cookie scoop, drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly.
  6. Bake for 10-12 minutes until edges are lightly golden and centers are soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
