Ingredients
  

  • 4 medium yellow onions thinly sliced
  • 4 tbsp unsalted butter
  • 6 cups beef broth
  • 1/2 cup dry white wine
  • 1 fresh baguette sliced
  • 2 cups grated Gruyère cheese

Method
 

  1. Slice the onions thinly for even caramelization
  2. In a large pot, melt butter over medium heat and add onions. Stir frequently until golden brown (20-25 minutes)
  3. Deglaze the pot with white wine, scraping up any browned bits
  4. Add beef broth and simmer for 15-20 minutes
  5. Toast baguette slices until golden brown
  6. Ladle soup into oven-safe bowls, top with baguette slices and Gruyère cheese, then broil until bubbly (3-5 minutes)

Notes

Take time to properly caramelize onions for best flavor. Use oven-safe bowls for broiling. Watch carefully under broiler to prevent burning.
