- Wash collard greens thoroughly under cold running water, shake off excess water, remove tough stems, and chop leaves into bite-sized pieces.
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Stir in minced garlic and cook for an additional minute.
- Pour in chicken or vegetable broth and bring to a gentle simmer. Add chopped collard greens, smoked turkey leg or ham hock, red pepper flakes, salt, and pepper. Stir to combine.
- Cover the pot and let the collard greens simmer for about 45 minutes to 1 hour, stirring occasionally. Adjust seasoning as needed.
- Once tender, remove the smoked turkey leg or ham hock, shred any meat from the bone, and mix it back into the greens. Serve hot.
