Collard Greens

  • 2 pounds collard greens, washed and chopped
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 smoked turkey leg or ham hock (optional for flavor)
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar (optional)

Instructions
 

  • Wash collard greens thoroughly under cold running water, shake off excess water, remove tough stems, and chop leaves into bite-sized pieces.
  • In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Stir in minced garlic and cook for an additional minute.
  • Pour in chicken or vegetable broth and bring to a gentle simmer. Add chopped collard greens, smoked turkey leg or ham hock, red pepper flakes, salt, and pepper. Stir to combine.
  • Cover the pot and let the collard greens simmer for about 45 minutes to 1 hour, stirring occasionally. Adjust seasoning as needed.
  • Once tender, remove the smoked turkey leg or ham hock, shred any meat from the bone, and mix it back into the greens. Serve hot.
