- In a large bowl, combine the chicken strips with 2 tablespoons of olive oil, paprika, cumin, cayenne pepper, garlic powder, salt, and pepper. Mix well and let marinate for at least 30 minutes.
- Slice the onion into rings and the bell peppers into strips. Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and peppers, sauté for about 5-7 minutes until soft and slightly caramelized.
- In the same skillet, increase the heat to medium-high and add the marinated chicken strips. Cook for about 7-10 minutes, stirring occasionally, until fully cooked and golden brown.
- Add the sautéed vegetables back into the skillet with the chicken. Stir everything together and let it heat for a couple of minutes.
- Assemble the fajitas by placing a generous amount of the chicken and vegetable mixture in the center of warm tortillas. Top with sour cream, fresh cilantro, and lime wedges. Roll up the tortillas and serve immediately.
