- Gather all ingredients and measuring tools.
- In a medium bowl, combine olive oil, minced chipotle peppers, lime juice, minced garlic, ground cumin, smoked paprika, salt, black pepper, and honey. Whisk until well blended.
- Place chicken pieces in a resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring all pieces are coated. Seal or cover and refrigerate for at least 1 hour, preferably up to 8 hours.
- Preheat grill or skillet over medium-high heat. Remove chicken from marinade, allowing excess to drip off. Cook chicken for about 6-7 minutes on each side until it reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes before serving. Garnish with fresh chopped cilantro.
