- In a mixing bowl, combine ground beef with soy sauce, gochujang, brown sugar, sesame oil, minced garlic, and ginger. Mix well and marinate for at least 15 minutes.
- In a small bowl, mix additional gochujang with soy sauce and a splash of sesame oil to create a spicy sauce.
- Heat a large skillet over medium-high heat. Add the marinated beef, breaking it apart with a spatula. Cook for about 5-7 minutes until browned and cooked through. Drain excess fat if necessary.
- Pour the prepared spicy sauce over the beef and stir well. Cook for an additional 2-3 minutes to meld flavors.
- Warm the tortillas in a separate skillet or on a griddle for about 30 seconds on each side.
- Assemble the tacos by placing a spoonful of the spicy beef mixture onto each tortilla. Top with chopped kimchi, fresh cilantro, and sliced green onions.
- Serve with lime wedges on the side.
