Method
- Prepare all ingredients: peel and devein shrimp, mince garlic, halve cherry tomatoes, and chop parsley.
- In a large pot, bring salted water to a rolling boil. Add spaghetti or linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Season with salt and pepper, then remove shrimp from skillet and set aside.
- In the same skillet, add halved cherry tomatoes and cook for 3-4 minutes until they start to soften. Pour in the broth and bring to a simmer.
- Stir in heavy cream and let it cook for another 2-3 minutes until slightly thickened.
- Add the drained pasta and cooked shrimp back into the skillet. Toss everything together, adding reserved pasta water as needed to reach desired consistency. Adjust seasoning with salt and pepper to taste.
- Serve immediately, garnished with chopped parsley and grated Parmesan cheese.
