Ingredients

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken breasts by slicing each one horizontally to create a pocket, being careful not to cut all the way through.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped spinach and minced garlic, sauté for 2-3 minutes until the spinach is wilted.
  4. In a mixing bowl, combine the sautéed spinach with crumbled feta cheese, softened cream cheese, dried oregano, salt, pepper, and lemon juice. Mix until well combined.
  5. Stuff each chicken breast pocket with the spinach and feta mixture. Secure with toothpicks if necessary.
  6. In the same skillet, add another tablespoon of olive oil and heat over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  7. Transfer the seared chicken breasts to a baking dish. If desired, sprinkle paprika on top. Bake in the preheated oven for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  8. Remove from the oven and let the chicken rest for a few minutes before slicing and serving.
