Method
- Preheat your oven to 375°F (190°C).
- Prepare the chicken breasts by slicing each one horizontally to create a pocket, being careful not to cut all the way through.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped spinach and minced garlic, sauté for 2-3 minutes until the spinach is wilted.
- In a mixing bowl, combine the sautéed spinach with crumbled feta cheese, softened cream cheese, dried oregano, salt, pepper, and lemon juice. Mix until well combined.
- Stuff each chicken breast pocket with the spinach and feta mixture. Secure with toothpicks if necessary.
- In the same skillet, add another tablespoon of olive oil and heat over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken breasts to a baking dish. If desired, sprinkle paprika on top. Bake in the preheated oven for 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Remove from the oven and let the chicken rest for a few minutes before slicing and serving.
