Ingredients
  

  • 4 pieces Boneless, skinless chicken breasts Main protein source for the dish.
  • 1 cup Fresh spinach, chopped Adds vibrant color and is packed with vitamins.
  • 1/2 cup Feta cheese, crumbled Provides a creamy texture and tangy flavor.
  • 1/4 cup Cream cheese, softened Adds richness and helps bind the filling.
  • 2 cloves Garlic, minced Enhances flavor with aroma.
  • 1 teaspoon Dried oregano Adds an Italian touch to the filling.
  • to taste Salt and pepper Enhances overall flavor.
  • 2 tablespoons Olive oil Used for sautéing and adds healthy fats.
  • 1 teaspoon Lemon juice Brightens flavors and adds freshness.
  • 1/2 teaspoon Paprika (optional) For added color and a hint of smokiness.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Prepare the chicken breasts by slicing each one horizontally to create a pocket, being careful not to cut all the way through.
  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped spinach and minced garlic, sauté for 2-3 minutes until the spinach is wilted.
  • In a mixing bowl, combine the sautéed spinach with crumbled feta cheese, softened cream cheese, dried oregano, salt, pepper, and lemon juice. Mix until well combined.
  • Stuff each chicken breast pocket with the spinach and feta mixture. Secure with toothpicks if necessary.
  • In the same skillet, add another tablespoon of olive oil and heat over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  • Transfer the seared chicken breasts to a baking dish. If desired, sprinkle paprika on top. Bake in the preheated oven for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  • Remove from the oven and let the chicken rest for a few minutes before slicing and serving.
