Steak Ingredients

  • 1 pound Flank steak Marinated for flavor and tenderness.
  • 2 tablespoons Olive oil Used for marinating the steak.
  • 2 teaspoons Chili powder Adds spice to the marinade.

Salsa Verde Ingredients

  • 1 cup Tomatillos, husked and chopped Base for the salsa verde.
  • 1/2 cup Fresh cilantro, chopped Adds freshness to the salsa.

  • 1 lime Juiced Adds acidity to the salsa.

Burrito Ingredients

  • 4 large Flour tortillas For wrapping the burritos.
  • 1 cup Cooked rice Filling for the burritos.
  • 1 cup Black beans, drained and rinsed Adds protein and fiber.
  • 1 cup Shredded cheese (cheddar or Monterey Jack) For added creaminess.
  • 1/2 cup Sour cream (optional) For serving.

Instructions
 

  • Marinate the flank steak by mixing olive oil, chili powder, cumin, garlic powder, salt, and pepper in a bowl. Coat the steak evenly and let it sit for at least 30 minutes.
  • Preheat your grill or skillet over medium-high heat. Cook the marinated flank steak for about 5-7 minutes on each side for medium-rare. Adjust cooking time for desired doneness.
  • Let the steak rest for 5 minutes, then slice thinly against the grain.
  • Prepare the salsa verde by blending tomatillos, cilantro, jalapeño, lime juice, and salt in a blender until smooth. Adjust seasoning to taste.
  • Assemble the burritos by placing a portion of rice, black beans, sliced steak, cheese, and salsa verde in the center of each tortilla. Optionally add sour cream.
  • Roll the burrito tightly, folding in the sides to enclose the filling. Grill the assembled burritos seam-side down for 2-3 minutes on each side until golden brown.
  • Slice the burritos in half and serve with additional salsa verde and garnishes like cilantro and lime wedges.
