Ingredients

  • 1 pound lean ground beef
  • 8 ounces penne or fusilli pasta
  • 1 cup heavy cream or half-and-half
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 cup low-sodium vegetable broth
  • 1 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Equipment

  • large skillet
  • Spatula
  • Large pot for pasta
  • colander

Method

  1. In a large skillet over medium heat, heat olive oil. Sauté diced onion until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  2. Add ground beef to the skillet. Cook until browned, about 6-8 minutes, seasoning with salt and pepper.
  3. Meanwhile, boil salted water in a separate pot and cook pasta according to package instructions until al dente. Drain and set aside.
  4. Pour vegetable broth into the skillet with cooked beef and stir in heavy cream. Simmer for about 3 minutes until slightly thickened. Stir in Parmesan cheese until melted.
  5. Combine cooked pasta with the sauce in the skillet, stirring gently to coat evenly. Adjust seasoning if necessary.
  6. Serve immediately with extra Parmesan on top.

Notes

Use lean ground beef for healthier option. Fresh minced garlic works better than garlic powder. Grated fresh Parmesan melts better than pre-grated.
