Method
 

  1. In a medium bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar until well combined.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Ensure it is evenly distributed.
  3. Preheat the oven to 350°F (175°C) and bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let it cool completely.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add the powdered sugar and vanilla extract, mixing until well incorporated.
  6. In another bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture until fully combined and smooth.
  8. Spoon the cream cheese filling into the cooled graham cracker crust, spreading it evenly.
  9. Refrigerate the pie for at least 2 hours to allow it to set.
  10. In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries evenly.
  11. Allow the mixture to sit for about 15 minutes to release the juices.
  12. Once the pie has set, remove it from the refrigerator and top with the strawberry mixture.
  13. Cut into slices and serve chilled.
