Ingredients
  

  • 4 large Potatoes Starchy varieties like Russet are best for baking.
  • 200 g Cream cheese Adds a rich, creamy texture to the filling.

  • 100 g Diced ham Can be replaced with a plant-based alternative for vegetarian options.
  • 2 pieces Green onions Finely chopped for a fresh, mild onion flavor.
  • 1 teaspoon Garlic powder Enhances the overall flavor of the filling.

Instructions
 

  • Wash the potatoes thoroughly under running water and poke several holes in each potato with a fork.
  • Preheat your oven to 200 °C (about 400 °F) and place the potatoes on a baking sheet.
  • Bake the potatoes for about 45 to 60 minutes until soft when squeezed.
  • In a mixing bowl, combine cream cheese, grated cheese, diced ham, chopped green onions, garlic powder, salt, and pepper. Mix until well combined.
  • Once the potatoes are baked and cooled slightly, cut the top off each potato and scoop out the insides, leaving a small border.
  • Add the scooped potato to the filling mixture and stir well. Fill each potato with the mixture, packing it in gently.
  • Return the stuffed potatoes to the baking sheet and bake for an additional 15 to 20 minutes until the filling is heated through and golden brown.
  • Garnish with fresh parsley and serve hot.
