Instructions
Wash the potatoes thoroughly under running water and poke several holes in each potato with a fork.
Preheat your oven to 200 °C (about 400 °F) and place the potatoes on a baking sheet.
Bake the potatoes for about 45 to 60 minutes until soft when squeezed.
In a mixing bowl, combine cream cheese, grated cheese, diced ham, chopped green onions, garlic powder, salt, and pepper. Mix until well combined.
Once the potatoes are baked and cooled slightly, cut the top off each potato and scoop out the insides, leaving a small border.
Add the scooped potato to the filling mixture and stir well. Fill each potato with the mixture, packing it in gently.
Return the stuffed potatoes to the baking sheet and bake for an additional 15 to 20 minutes until the filling is heated through and golden brown.
