- Wash the potatoes thoroughly under running water and poke several holes in each potato with a fork.
- Preheat your oven to 200 °C (about 400 °F) and place the potatoes on a baking sheet.
- Bake the potatoes for about 45 to 60 minutes until soft when squeezed.
- In a mixing bowl, combine cream cheese, grated cheese, diced ham, chopped green onions, garlic powder, salt, and pepper. Mix until well combined.
- Once the potatoes are baked and cooled slightly, cut the top off each potato and scoop out the insides, leaving a small border.
- Add the scooped potato to the filling mixture and stir well. Fill each potato with the mixture, packing it in gently.
- Return the stuffed potatoes to the baking sheet and bake for an additional 15 to 20 minutes until the filling is heated through and golden brown.
- Garnish with fresh parsley and serve hot.
