Ingredients
  

  • 2 cups Grated zucchini About 2 medium zucchinis, excess moisture squeezed out.
  • 1/2 cup Unsweetened applesauce Provides natural sweetness.
  • 1/4 cup Coconut oil Melted, adds richness.
  • 3 large Eggs Room temperature for better mixing.
  • 1 teaspoon Vanilla extract Enhances flavor.
  • 1 1/2 cups Almond flour Gluten-free alternative.
  • 1/2 teaspoon Baking soda Leavening agent.
  • 1 teaspoon Baking powder Leavening agent.

  • 1/2 cup Chopped walnuts or pecans Optional for added crunch.
  • 1/2 cup Sugar-free chocolate chips Optional for sweetness.

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  • Grate the zucchini and squeeze out excess moisture using a clean kitchen towel. Set aside.
  • In a mixing bowl, combine almond flour, baking soda, baking powder, ground cinnamon, and salt. Whisk until well blended.
  • In another large bowl, whisk together the unsweetened applesauce, melted coconut oil, eggs, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  • Fold in the prepared zucchini, and if desired, add chopped nuts or sugar-free chocolate chips.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
