Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel. Set aside.
  3. In a mixing bowl, combine almond flour, baking soda, baking powder, ground cinnamon, and salt. Whisk until well blended.
  4. In another large bowl, whisk together the unsweetened applesauce, melted coconut oil, eggs, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  6. Fold in the prepared zucchini, and if desired, add chopped nuts or sugar-free chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
