- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent. Stir in minced garlic and cook for an additional minute.
- Add diced carrots, celery, and chopped bell pepper. Cook for about 5 minutes, stirring occasionally.
- Pour in vegetable broth and add diced tomatoes. Bring to a boil, then reduce heat. Add green beans, corn, thyme, oregano, salt, and pepper. Let simmer for 15-20 minutes.
- Stir in chopped spinach or kale and cook for an additional 5 minutes. Squeeze in lemon juice, taste, and adjust seasoning if needed.
- Ladle the hot soup into bowls and serve immediately.
