  • 1 tablespoon Olive Oil for sautéing vegetables
  • 1 medium Onion, chopped provides a sweet and savory base

  • 4 cups Vegetable Broth base of the soup

  • 1 cup Green Beans, trimmed and cut adds crunch
  • 1 cup Corn Kernels fresh or frozen
  • 1 teaspoon Dried Thyme for flavor
  • 1 teaspoon Dried Oregano for flavor
  • to taste Salt and Pepper for seasoning
  • 2 cups Fresh Spinach or Kale, chopped adds nutrition and color
  • 1 tablespoon Lemon Juice for brightness

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent. Stir in minced garlic and cook for an additional minute.
  • Add diced carrots, celery, and chopped bell pepper. Cook for about 5 minutes, stirring occasionally.
  • Pour in vegetable broth and add diced tomatoes. Bring to a boil, then reduce heat. Add green beans, corn, thyme, oregano, salt, and pepper. Let simmer for 15-20 minutes.
  • Stir in chopped spinach or kale and cook for an additional 5 minutes. Squeeze in lemon juice, taste, and adjust seasoning if needed.
  • Ladle the hot soup into bowls and serve immediately.
