Ingredients

  • 2 pounds chicken wings split into flats and drumettes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.25 cup honey
  • 0.25 cup brown sugar
  • 0.25 cup hot sauce choose your favorite brand for desired heat
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon cayenne pepper optional, for extra heat
  • sliced green onions optional garnish
  • sesame seeds optional garnish
  • chopped fresh cilantro optional garnish

Equipment

  • wire rack
  • baking sheet
  • Aluminum foil
  • small saucepan
  • Large mixing bowl
  • Deep fryer or heavy-bottomed pot (optional for frying)

Method

  1. Rinse chicken wings under cold water and pat completely dry with paper towels. In a large bowl, toss wings with salt, pepper, garlic powder, and smoked paprika until evenly coated.
  2. For baking: Preheat oven to 400°F (200°C). Place wings on a wire rack set over a baking sheet lined with aluminum foil. Bake for 40-45 minutes, flipping halfway through, until golden brown and crispy.
  3. For frying: Heat oil in a deep fryer or heavy-bottomed pot to 375°F (190°C). Fry wings in batches for 8-10 minutes until golden and cooked through. Remove and drain on paper towels.
  4. While wings cook, combine honey, brown sugar, hot sauce, soy sauce, apple cider vinegar, and cayenne pepper in a small saucepan over medium heat. Cook, stirring occasionally, until mixture bubbles and slightly thickens, about 3-5 minutes.
  5. Transfer cooked wings to a large mixing bowl. Pour sweet and spicy glaze over wings and toss until evenly coated.
  6. Serve immediately, garnished with green onions, sesame seeds, or cilantro if desired.

Notes

For crispiest wings, ensure they are completely dry before cooking. Adjust honey or hot sauce to taste. Wings can be baked ahead and reheated at 375°F for 10-15 minutes, then tossed in fresh glaze before serving.
