- Prepare the chicken by placing the chicken thighs in the bottom of the crockpot, spreading them out evenly.
- In a medium bowl, combine pineapple chunks, soy sauce, brown sugar, ketchup, minced garlic, minced ginger, black pepper, and red pepper flakes. Mix well until the brown sugar dissolves.
- Pour the sauce mixture over the chicken in the crockpot, ensuring every piece is well coated.
- Set the crockpot to low and cook for 6-7 hours or high for 3-4 hours until the chicken is tender.
- Once cooked, shred the chicken using two forks and return it to the crockpot, stirring it into the sauce.
- Serve the chicken over rice or in lettuce wraps, garnished with sliced green onions and sesame seeds.
Notes
For best results, use boneless, skinless chicken thighs. Avoid lifting the lid during cooking to maintain heat.
