Method
 

  1. Preheat your oven to 400°F (200°C). Wash, peel, and dice the sweet potatoes into uniform bite-sized cubes.
  2. Toss the sweet potato cubes with 1 tablespoon olive oil, salt, and pepper. Spread them in a single layer on a parchment-lined baking sheet without crowding.
  3. Roast the sweet potatoes for 25 minutes, tossing them halfway through for even browning and caramelization.
  4. While sweet potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
  5. Add minced garlic and saute for 30 seconds until fragrant. Add the ground beef, breaking it apart with a spatula.
  6. Cook the beef for 5-7 minutes until fully browned with no pink remaining. Season generously with salt and pepper.
  7. In a small bowl, mix 1/4 cup honey with cayenne pepper or chili flakes to taste, adjusting heat to your preference.
  8. To assemble, layer roasted sweet potatoes as the base, top with seasoned ground beef, add a generous scoop (about 1/4 cup) of cottage cheese, drizzle with hot honey, and crown with sliced avocado.

Notes

For meal prep, store components separately in airtight containers for 3-4 days. Sweet potatoes and beef can be frozen for up to 3 months.
