Method
- Preheat your oven to 400°F (200°C). Wash, peel, and dice the sweet potatoes into uniform bite-sized cubes.
- Toss the sweet potato cubes with 1 tablespoon olive oil, salt, and pepper. Spread them in a single layer on a parchment-lined baking sheet without crowding.
- Roast the sweet potatoes for 25 minutes, tossing them halfway through for even browning and caramelization.
- While sweet potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
- Add minced garlic and saute for 30 seconds until fragrant. Add the ground beef, breaking it apart with a spatula.
- Cook the beef for 5-7 minutes until fully browned with no pink remaining. Season generously with salt and pepper.
- In a small bowl, mix 1/4 cup honey with cayenne pepper or chili flakes to taste, adjusting heat to your preference.
- To assemble, layer roasted sweet potatoes as the base, top with seasoned ground beef, add a generous scoop (about 1/4 cup) of cottage cheese, drizzle with hot honey, and crown with sliced avocado.
Notes
For meal prep, store components separately in airtight containers for 3-4 days. Sweet potatoes and beef can be frozen for up to 3 months. Substitute ground turkey, lentils, or chickpeas for different protein options. Adjust hot honey spice level to taste. Top with fresh herbs like cilantro or parsley for extra flavor.
