Ingredients
  

  • 3 medium sweet potatoes peeled and diced into 1-inch pieces
  • 1 pound green beans ends trimmed
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon fresh lemon juice freshly squeezed
  • 1/4 cup grated Parmesan cheese optional

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the diced sweet potatoes and trimmed green beans.
  3. Pour the olive oil over the vegetables and add the garlic powder, onion powder, smoked paprika, salt, and pepper. Toss thoroughly until all vegetables are well coated.
  4. Transfer the mixture onto a large baking sheet, spreading the vegetables in a single layer with space between pieces.
  5. Roast for 25-30 minutes, stirring halfway through, until sweet potatoes are soft and golden brown.
  6. Remove from oven and immediately drizzle with fresh lemon juice.
  7. If desired, sprinkle with Parmesan cheese before serving.

Notes

For added protein, toss cooked chickpeas or shredded rotisserie chicken onto the pan before roasting. Feel free to experiment with different spices like Italian herbs or curry powder. Store leftovers in an airtight container in the refrigerator for up to 3 days.
