- Preheat your oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish with oil or cooking spray.
- Heat the olive oil in a large skillet over medium heat. Sauté the diced onion for 3 to 4 minutes until soft and translucent.
- Add the ground turkey to the skillet. Break it apart with a wooden spoon and cook until browned and no longer pink, about 5 to 6 minutes.
- Stir in the minced garlic, diced bell pepper, and diced sweet potatoes. Sprinkle in the smoked paprika, cumin, thyme, salt, and pepper. Stir well to coat and cook for another 3 to 5 minutes until spices are fragrant.
- Transfer the mixture to the prepared baking dish. Spread it out evenly. Cover tightly with aluminum foil and bake for 25 minutes, or until sweet potatoes are fork-tender.
- Remove the foil. Sprinkle the shredded mozzarella or cheddar cheese over the top. Return to the oven, uncovered, and bake for another 10 to 15 minutes, until the cheese is bubbly and golden brown.
- Remove from oven, let sit for a minute or two. Garnish with fresh chopped parsley or cilantro and serve hot.
Notes
Cut sweet potatoes into small cubes (about 1/2 inch) to ensure they cook through at the same rate as the turkey mixture. Covering the dish is crucial for steaming the sweet potatoes until tender.
